This is the easiest way to make the perfect cupcake, which my children love.
Weigh the eggs and then whatever they measure weigh the same amount for the flour, sugar and butter and always a heap spoon of baking powder. Put the whole leap in a blender and place in cupcake cases. Pop in the oven at around 170°.
This never fails and I haven’t used a fairy cake recipe in years since I worked this out.
I usually use 2 eggs for 12 cupcakes.
